At the helm of the Bristol's kitchens since April 2023, Christophe Pagnot is bringing a breath of fresh air to the restaurant of this historic address, appreciated for its chic, authentic and friendly atmosphere. He revisits the classics of French gastronomy with influences from Asia, Latin and the French islands. The cuisine is simple, creative and rich in flavour, highlighting the raw product in all its forms. The Côté Square restaurant, awarded 13 out of 20 points by the GaultMillau guide in 2025, is a real invitation to travel.
